The signatories of the “Grain Noble” quality charter are committed to complying with strictly defined rules in order to safeguard the authenticity of the naturally liquorous Valais wines. The producers pledge to select exclusively from vines in the best areas of appellation; to consider only vines that are over fifteen years of age; to avoid any form of additive to the grapes or the must (chaptalisation, inverse osmosis); to select only must of a minimum of 130° Oechslé; and to mature at least twelve months in casks or barrels.
